Anchovies tend to be a staple of my cooking, as they add so much flavour with so little effort. However, they don’t go with every meal and jars of things tend to get forgotten about and pushed to the back of the fridge. A take on a Spanish classic, this is easy to do and perfect with a cold beer. But it’s also a great hangover snack for when you’ve had a few too many.

Takes approximately 10 minutes. This recipes serves 2 people as a snack.
You will need:
- 2 slices of bread (preferably bloomer of some kind)
- 2 garlic cloves, peeled and left whole
- 1/2 large tomato
- 4 anchovy fillets
Tip: If you have any hard cheese, such as parmesan or pecorino, grate a little on top before putting it under the grill.
Start by preheating your grill. Lightly toast the 2 slices of bread. Rub the 2 garlic cloves on the bread – effectively you are grating the garlic, so keep going until the garlic has been used up.
In the same way, rub the 1/2 tomato over each slice of toast until you can see the colour coming out and the toast starts to feel soggy. Top with 2 anchovy fillets on each piece of toast, and put back under the grill for 3 minutes or until golden brown.
