I have a glut of egg whites in the freezer, leftovers from making custards and other such necessary things. So, in an attempt to use some up I had a go at making marshmallow and sandwiched it to make a hybrid wagon-wheel-chocolate-teacake.
The eclair has to be one of my favourite sweet treats EVER. And it has to be full to the brim with custard. This one is salted caramel - choux pastry filled with a salted caramel crème patissiere, topped with salted caramel icing and a caramel hazelnut.
Happy Fat Tuesday, we've made it through another Monday in lockdown and pancakes definitely feel like the best way to celebrate. Peaches & cream crêpes with a drizzle of honey and a sprinkle of pistachio 🥞
Ultimate chocolate ooze, seemed appropriate content for Valentine's Day. Crisp chocolate pastry shell with a chocolate fondant filling, baked until just set for the ooziest, most indulgent chocolate tart. Valentine's Day or not, I don't think there is any better comfort than molten chocolate ❤️
Swirly croissant domes made from croissant dough scraps 🥐 I love croissants with a passion and can't bear to throw away any of the scraps that come from making them, so bundled them together to make these. Slightly crunchy on the outside, and super soft and buttery on the inside. We dipped these in vanilla sugar, but inhaled them so quickly I didn't get a picture...
Blood oranges are in season which I am so excited about, so this little Petit Gateau is in honour of one of my favourite fruits 🍊
